REaL BREAD CRAFTED BY HAND

When’s the last time you tasted REAL bread? At Mission Bakehouse our bread is different. It starts with heritage whole grains that we stone mill in-house. We hand mix, shape, and ferment each loaf for at least 36 hours. The result: a nutritious bread with a tender, chewy, crumb with just the right amount of sour.

FLOUR, WATER, SALT - THAT’S IT!

When was the last time you read the ingredients on the back of your store bought bread? At Mission Bakehouse you can be sure your bread is free of conditioners, bleach, preservatives, etc. We keep it simple - making our bread like your great grandma used to - with just flour, water, and salt.

Our Ingredients: Fresh and Local

Supporting Turlock’s Local Grain Economy

We are proud supporters or Eck Farms. Jon Eck is a third generation Turlock farmer. In December 2020, Jon, along with his father and brother planted their first wheat crop! Veteran potato and almond farmers, the Ecks drew upon their regenerative agriculture practices with rye and other cover crops to take their first foray into wheat farming. Come late summer 2021, with a little luck (and a little rain), they’ll be harvesting the first wheat crop by Turlock farmers in decades! And you know we’ll be ready and waiting to buy up whatever they have to mill up and turn into bread!

Sea Salt From San Francisco Bay

Our bread only has 3 ingredients so each one has to be the best. That’s why we use Giusto's natural sea salt, harvested from San Francisco Bay. This extraordinary product is extracted from the only living sea salt bed in North America and is 100% pure - there are no flowing agents, added minerals or anti-caking agents.

Flour By The Pallet

High quality flour is expensive! Grocery store prices and warehouse delivery fees are prohibitive for most small scale bakeries and home bakers. We figured out a hack! We order bread flour by the PALLET (50, 50lb bags) and you come pick up as many as you can use. You buy them at cost from us - usually LESS than $1/lb. You pay what we pay. No service fee.

LOcally Grown wheat

Jon Eck and his family are doing something special! They are local farmers bringing heritage wheat back to the Central Valley. Over 100 years ago wheat was the main crop being grown in Turlock and surrounding farm towns. Over the decades wheat has given way to dairies, fruit, nuts, and other commodity crops. Eck Farms is making it possible to do something truly unique - make bread with locally grown grain! Let’s support their grain venture by purchasing their grain together.

Eck farms is going to make their whole grains available in 50lb bags and 1lb bags. They also plan to mill limited quantities into flour for purchase in 1lb bags.* Grain and flour will be available for pick up at Mission Bakehouse and pop-up bakery locations like Savor Charcuterie.

* Eck Farms grain and wheat prices TBD

Additionally, as more Eck grains and flours come available we’ll keep you’ll be the first to know.

When we place larger orders of local grain together we help sustain our local FARMERS and develop a regional grain shed that nourishes our COMMUNITY.
